Hummus Pasta Salad

Hummus Pasta Salad

Prep Time 10 minutes
Prepare dinner Time 10 minutes

Substances

  • 16 oz Farfalle pasta (or penne/fusilli)
  • 1/2 cup hummus
  • 1 tsp lemon juice
  • 1 tbsp water
  • 1/2 cup halved cherry tomatoes
  • ¼ cup halved olives
  • 1/4 cup artichokes
  • 1/2 cup diced cucumber
  • 1/2 cup chopped crimson bell pepper
  • 5 oz canned tuna
  • 1/2 cup feta cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions

  • Prepare dinner pasta in line with bundle instructions.
  • Whereas pasta is cooking, chop your greens.
  • In a bowl, mix the hummus, lemon juice and water to make hummus sauce. Whether it is too thick, add water 1 tbsp at a time.
  • When pasta is finished cooking, drain and let cool. Add cooled pasta to giant bowl with hummus sauce. Stir till pasta is coated with sauce.
  • Add in chopped greens, tuna, feta cheese, and salt and pepper and gently combine.
  • Serve heat or chilly.
